You don't need two blades to allow double assassinations though, Arno Dorian does it in Unity. Imo it could just be a cultural thing/character specific thing, Arno being an exiled Assassin can do it because he doesn't give a fuck for rules, Altair can do it because he feels like he's 'earned' it and Ezio can do it because Da Vinci made a second hidden blade, so he uses it as such.
Simply put, Ezio doesn't fight with his hidden blades. None of the assassins do. He essentially ONLY uses them to get assassinations, which is what he does in his sigs. When fighting in the game, Ezio canonically uses a sword, and for the orb, the apple of eden would make more sense than the katars.
Ezios main hidden blade on his left side is the blade with the pistol attached and the poison inside the blade. Its not a seperate blade. Leonardo explains this at one point. The right blade is only for assassination until it gets destroyed at the beginning of revelations. Then Ezio replaces his right blade with the hookblade.
There was a moment I thought to have done, clearly felt the indifference, the impossibility of the thing, then a series of happy coincidences, indeed it would be rather tragic, they made me a bit closer, with tragic consequences, already suffer to get things away, but have them so close and we can not do anything .. it's worse ..

Most of the hidden blade assassinations, particularly aerial ones, go for the head, in the games. So that's a definite kill. But yeah, as for the ones to the torso, I guess they just aim for vitals. Some of Ezio's finishers with the hidden blade involved multiple blows. If I recall, Altair usually went for the head/neck area.
